Piadina with Fjord Salmon, Avocado and Stracciatella

Who says a quick lunch can’t also be well thought out? This piadina brings together creaminess and freshness in a simple yet very contemporary balance: Fjord salmon adds character, avocado brings roundness, and stracciatella ties everything together with a soft, delicate finish. Perfect when time is short but you don’t want to compromise on flavour.

Ingredients

Ripe avocado

Stracciatella

Tender leafy salad (lamb’s lettuce or baby lettuce)

Extra virgin olive oil

Black pepper

Lemon juice

Procedure

  1. Warm the piadine in a non-stick pan for a few minutes on each side, until soft and lightly golden.
  2. Meanwhile, peel the avocado, remove the stone and slice it thinly. Season with a pinch of salt, black pepper and a few drops of lemon juice. Wash and thoroughly dry the salad leaves.
  3. Spread a generous layer of stracciatella over each warm piadina, then add the salad, the avocado and finish with the Fjord salmon. Drizzle with a little extra virgin olive oil, fold and serve immediately.

Extra tip: for an added touch, sprinkle over some finely grated lemon zest or a handful of toasted seeds (sesame or pumpkin) before folding the piadina.
